Few Italian traditions are as demanding as that of balsamic. The grape must, slowly cooked, enters a battery of barrels of different woods and sizes, and there it waits. It is racked from one barrel to another, from one wood to another, for years. Time is the main ingredient and patience the only valid method.
Balsámico Oria is born of that tradition. It matures in the historic barrels of the Acetaia Oria, in Montalcino: a unique place in one of the world's most prestigious winegrowing areas, where the care of balsamic lives alongside the care of Brunello.
We call it black gold: for its deep colour, for its silky density, for the balance between acidity and sweetness that only appears after many rackings. One drop is enough to transform a dish.

Andrea Severi is Oria's aceto maker and a leading figure at the Acetaia Oria in Tuscany. His work accompanies the evolution of an aceto born of historic barrels, guiding the artisanal maturation process through time, woods and rackings.
With a sensitive and precise eye, Andrea turns every tasting into an experience of patience, memory and Italian tradition. For Oria members, a visit to his acetaia is a glimpse into a knowledge passed down from generation to generation —and to live it first-hand, glass in hand, before the battery of barrels that will one day return your bottle.
Only this way is a balsamic made that deserves to be called black gold: with a master who listens to what the wood has to say.

Aceto Mosaico
Access to the Aceto Mosaico membership is €3,000 and is linked to 250 m² of vineyard that, through successive rackings, are transformed into your bottles of black gold. There are only 20 places: a truly exclusive and unique experience in the Montalcino area.
Only 20 members in the world will gain access to the Aceto Mosaico. Once the places are filled, they will not reopen.
