Italy is the historic cradle of the world's finest olive oils. A pillar of the Mediterranean diet, oil is a fundamental condiment that tells the story of humanity —and, at the same time, brings health and flavour to contemporary gastronomy and cooking.
For Oliva Oria we work with the three classic varieties of Tuscany: Frantoio, Leccino and Moraiolo. Each brings its own character: Frantoio, fruitiness and balance; Leccino, softness and sweetness; Moraiolo, intensity and a peppery bite.
The result is a golden-green oil with intense aromas of fresh grass, artichoke and green almond. On the palate, the pepperiness of the Moraiolo gives way to a clean, mineral finish, a direct reflection of the galestro soil of Val d'Orcia.

We called upon Giorgio Franci, considered the best oliomaker in the world. His oils have received the highest distinction —100/100— for the excellence of their craft, award after award, year after year.
Together with Roberto Cipresso, Giorgio created a unique blend for the Oria community, built on the most classic Tuscan varieties —Frantoio, Leccino and Moraiolo— brought to their finest expression by the hands of Italy's most awarded oliomaker.
The extraction method is by milling and centrifugation: the latest available technology. It preserves intact the polyphenols, the aromas and the fresh flavours of the olive, without altering its profile with heat or long contact with the air.

Olive Mosaico
Access to the Olive Mosaico membership is €2,000 and is linked to 50 m² of Oria's ancient olive grove —a total area of 35,000 m² in Val d'Orcia—. Each mosaico produces 24 litres of Oliva Oria extra virgin oil per year, which we send to your table.
